White Chicken Chili

Yields: 10 Servings

White Chicken Chili

Serve this spicy chili with cooling sour cream and fresh guac.

  • 2 lbs Chicken
  • 1 medium onion
  • 2 tsp garlic
  • 1 tbsp Vegetable oil
  • 3 15-oz cans White Northern Beans
  • 14 oz Chicken Broth
  • 1 can Green Chilies
  • 1 tsp Salt
  • 2 tsp ground Cumin
  • 2 tsp ground Oregano
  • 2 tsp pepper
  • 2 tsp Cayenne Pepper
  • 1 cup Sour Cream
  • 1/2 cup Whipping Cream
  1. Saute onions and garlic in oil.
  2. In bowl, lightly oil chicken and add half of the spices.
  3. When chicken is coated, add to garlic and onions.
  4. While chicken is cooking put beans, broth and green chilies in a pot on high heat.
  5. When chicken is cooked, add it to the beans and add the rest of the spices.
  6. Bring to a boil and add sour cream and whipping cream; Constantly stirring until sour cream and whipping cream is well blended.
  7. Taste and tweek if necessary.
