Loaded Baked Potato Salad

  • 5 pounds red potatoes
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 8 Eggs; hard-boiled
  • 1 pound Bacon
  • 2 cups shredded cheddar cheese
  • 1 sweet onion
  • 3 Dill pickle
  • 1 1/2 cups Sour cream
  • 1 cup Mayonnaise
  • 2 teaspoons prepared mustard
  1. Place the potatoes in a greased 15-in.
  2. x 10-in.
  3. x 1-in.
  4. baking pan; sprinkle with salt and pepper.
  5. Bake, uncovered, at 425° for 40-45 minutes or until tender.
  6. Cool in pan on a wire rack. I n a large bowl, combine the potatoes, eggs, bacon, cheese, onion and pickles.
  7. In a small bowl, combine the sour cream, mayonnaise and mustard; pour over the potato mixture and toss to coat.
  8. Yield: 20 servings..
