Bacon Potato Salad

Bacon Potato Salad

  • 6-8 medium (3 lbs.) potatoes
  • 1/2 pound bacon
  • 6 green onions
  • 2 celery ribs
  • 2 tablespoons diced pimiento
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup Blue PlateĀ® Mayonnaise
  • 1/2 cup sour cream
  • garnish with paprika, celery sticks
  1. COOK potatoes in boiling water to cover in a Dutch oven over medium heat 15 to 18 minutes or until tender.
  2. Drain and let cool slightly.PLACE potatoes in a large bowl.
  3. Add bacon, chopped green onions, and next 4 ingredients.
  4. Stir together Blue Plate Mayonnaise and sour cream until blended.
  5. Pour over potato mixture, tossing gently to coat.
  6. Cover and chill at least 1 hour.
  7. Garnish, if desired.
