Southwest Chicken Skewers Serves 5

  • 2 lbs boneless skinless chicken breasts
  • 1/4 upextra virgin olive oil
  • 1 Tbsp Chili Powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp sea salt
  • 1 tsp apple cider vinegar
  • Suggestion:
  • Chop 3 bell peppers and 1/2 red onion into 1 inch
  1. Place chicken in a gallon sized zip top bag.
  2. In a small bowl, whisk together the olive oil, vinegar and spices.
  3. Pour over chicken.
  4. While pushing out as much air as possible, seal bag.
  5. Roll bag around a little to make sure the chicken is evenly coated.
  6. Place bag in the fridge for at least 1 hour and up to 6hrs.
  7. Otherwise place in the freezer for an easy freezer meal.
  8. When ready to cook, thread chicken pieces on a skewer.
  9. If using wooden ones, make sure you soak the skewers for 30 mins before threading chicken and cooking so they don’t catch fire on the grill or in the oven.
  10. Grill chicken over medium high heat until cooked through (about 3 mins per side) or bake in an oven at 425F for 20-25 mins.
  11. Make sure to rotate skewers half way through cooking.
  12. Slice through chicken to make sure it’s cooked through, it should be white and no longer pink.These Southwest Chicken Kebabs are super fast to throw together or freeze for later! These can be grilled or baked in the oven too!.
