Almond Truffles

  • 1/2 cup Evaporated milk
  • 1/4 cup Granulated sugar
  • 12 ounces milk chocolate chips
  • 1/2 teaspoon almond extract
  • 1 cup almonds
  1. Combine evaporated milk and sugar in a small heavy saucepan.
  2. Cook over medium heat until mixture comes to a full rolling boil.
  3. Boil 3 minutes; stir constantly.
  4. Remove from heat.
  5. Stir in chocolate chips and almond extract until mixture is smooth.
  6. Chill 45 minutes.
  7. Shape into 1-inch balls.
  8. Roll in chopped almonds.
  9. Chill until ready to serve..
