Eggs in Avocado Cups

Quick and easy, healthy and hearty—not to mention delicious! Works well in toaster oven too.

  • 1 ripe avocado
  • 2 eggs
  • Salt
  • Pepper
  • Lime juice (optional)
  1. Preheat oven to 420F and line a baking sheet with parchment paper.
  2. Cut avocado in half and remove pit.
  3. Shave a tad off bottom of each half so it will sit flat.
  4. Place halves on lined baking sheet and out a little avocado flesh to leave a 1/4 inch rim.
  5. Sprinkle with salt and pepper, and add a drizzle of lime juice (if using).
  6. Break an egg into each avocado half, and don’t worry if it overflows; the runoff will cook just fine.
  7. Sprinkle again with salt and pepper if you want, or with whatever you like on your eggs (garlic powder is nice, or fresh-chopped herbs).
  8. Bake 15 to 20 minutes, or longer if you like your egg yolks firm.Mash up excess avocado with a little salt, pepper, and lime juice for a yummy spread on toast..
