Creamy Vegan Spinach Artichoke Dip

  • 3/4 cup cashew butter
  • 3/4 cup unsweetened soy milk
  • 3 tablespoons Fresh lemon juice
  • 2 cloves garlic
  • 3/4 teaspoon Kosher Salt
  • 1/2 teaspoon dry mustard
  • 2 cups Spinach whole-leaf washed and dried
  • 1 1/2 cups artichoke hearts
  1. Blend cashew butter, soy milk, lemon juice, garlic, mustard, salt and some fresh cracked black pepper.
  2. Add in 2/3 of the spinach and the artichokes and blend until smooth.
  3. Add in the rest of the spinach and artichokes and pulse a couple of times.
  4. Bake at 350 for 20 minutes, stirring once or twice..
